Pair Fresh Produce with Gluten-Free Bread for the Perfect Meal

The summer season is in full swing and that means bountiful local harvests, fresh produce, and homemade gluten-free bread from your favorite artisan bread bakery in New York City and the surrounding neighborhoods. As you head home with a basket full of veggies and fruits picked in their prime, don’t forget one crucial step: your meal plans. We’ve all fallen victim to summer produce waste before — you have delicious new ingredients, with big ideas on how to use them, but then they get shuffled around in the fridge, family or social events come up, and they go to waste. We want to help you get the most from your haul with a few versatile recipes to pair fresh produce with gluten-free bread for the perfect meal all summer long. 3×3 Kitchen is now available at farmer’s markets throughout the Hudson Valley, and now you can order online artisan bread to pair with your fresh produce.

If your goal is to heal your gut and cut down on inflammation, it’s important to give your gut easily digestible, anti-inflammatory foods that work naturally to restore gut flora. We’ve chosen two savory gluten-free dishes that use lots of fresh ingredients low in inflammatory markers (minus any dairy) to help you utilize your farmer’s market finds. Instead of teaching you a specific recipe, these aim to be experimental in nature so you don’t feel limited to specific ingredients.

DIY Greek Chickpea Salad

We love dishes that can be modified based on what you have in your fridge. This salad is versatile, full of flavor, and of course, gluten-free. When you’re throwing together a Greek Chickpea Salad, you can mix and match these ingredients as you’d like. This recipe helps cut down on the waste of fresh produce and is finish-the-bowl delicious. Here is a list of veggies and ingredients we like to add to ours:

  • Cucumbers
  • Chickpeas
  • Cherry tomatoes
  • Olives or Kalamata olives
  • Red onion (or pickled red onions)
  • Yellow pepper
  • Red pepper
  • Banana peppers
  • Parsley
  • Basil
  • Sea salt & cracked pepper
  • Feta cheese or goat cheese
  • (Cooked) Chicken, lamb, or a meat substitute

Chop up all the ingredients and eat it cold. We didn’t give you specific measurements, because we like that there are no rules. Add what you like and try new combinations. We also love adding different dressings like balsamic vinegar and avocado oil, a zesty mustard dressing, a lemony greek dressing, fresh lemon juice, red wine vinegar, or a classic Italian dressing. Want to make it a bit heartier? Try adding some quinoa or gluten-free orzo. Pair it with your favorite gluten-free bread, toasted to perfection and slathered with ghee or fresh grass-fed clarified herb butter for that warm flavorful crunch. You can now pre-order our artisan gluten-free bread online.

Gluten-Free Summer Frittata

A versatile summer frittata is essential for any busy household. We love frittatas for many reasons. Like the Greek Chickpea salad, a summer frittata has no limits to the ingredients you can add or the combinations you can try. With farm-fresh eggs as the base and loaded with your favorite veggies, meats, and cheeses, you pack in the Omega 3s, vitamins and minerals, fiber, protein, and calcium. When baked in a large 9”x13” glass baking dish, they easily feed a large group or make leftover servings that can be eaten any time of the day. Instead of giving you a specific recipe to follow, we encourage you to experiment and push your flavor boundaries. Here’s what we do:

  • Start with 8-14 eggs. For a light and airy texture, whisk eggs with cream until they are lighter and fluffier. Use fewer eggs if you have a lot of ingredients to avoid overflowing your pan. Use more eggs when you have fewer ingredients to fill the pan more.
  • Add your choice of cheese to your eggs. The choices here are endless. Choose feta, goat cheese, or other soft cheese for a creamy texture. Use hard cheeses like pepper jack, Colby, cheddar, parmesan, or mozzarella for a more cheesy texture. Mix and match for extra cheesy goodness. Then fold in your leafy greens and herbs.
  • Choose and cook your meat and vegetables. If you have specific flavor combinations you’ve been wanting to try, go for it! If you’re winging it, have fun and experiment. But first, be sure to season and brown your meat and sautee or roast your veggies. Once cooked, spread them evenly throughout the egg mix with a good fold.
  • Bake, settle and serve. At 350-375℉ cook until an internal temperature of 160℉ (about 45-55 minutes) and your frittata starts to settle in the middle. Let it sit for 15 minutes before cutting and serving. Top with your choice of sour cream, crema, or hot sauces and salsas.
